Banana Bread (GF, DF)

  • 2 to 3 very ripe bananas mashed
  • ⅓ cup melted unsalted dairy-free butter
  • 1 teaspoon baking soda
  • ¾ cup granulated sugar
  • Pinch salt
  • 2 large eggs, beaten
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups gluten-free flour
  • ¼ teaspoon xanthan gum (leave out if your flour already has it in it)
  • Mini chocolate chips
  • Chopped pecans 
  1. Preheat oven to 350.
  2. Paint a 4 x 8 loaf pan with melted dairy-free butter.
  3. In a medium mixing bowl, mash the ripe bananas until smooth.
  4. Add the baking soda to the mashed bananas.
  5. Stir the melted butter into the mashed bananas.
  6. Stir in the sugar, salt, eggs, and pure vanilla extract.
  7. Sift in the gluten-free flour and xanthan gum.
  8. Mix in some mini chocolate chips. 
  9. Pour the batter into a greased loaf pan.
  10. Sprinkle chopped peans on top. 
  11. Bake on the center rack for 50 – 60 minutes until a toothpick inserted in the center comes out clean.

Cool completely before slicing. Store in an air-tight container.
