Red Lentil Pasta
Ingredients
- Red lentil pasta
- Chicken breast
- Cherry tomatoes
- Salt and Pepper
- 1/3 cup finely chopped onion
- 1/2 cup chicken broth
- 1/4 cup dry white wine
- 2 tablespoons white/red wine vinegar
- 6 tablespoons butter
- 2 teaspoons basil
- Lots of onion powder
Directions
- Cook pasta according to bag.
- Boil chicken breast until cooked and then sauté in olive oil in skillet, add spices.
- Make sauce: Heat a skillet over medium-high heat. Coat pan with cooking spray. Add finely chopped onion to pan; sauté 2 minutes, stirring frequently. Stir in chicken broth, white wine, and white wine vinegar; bring to a boil. Cook until reduced to 1/4 cup (about 5 minutes). Remove from heat; stir in butter and basil.
- Combine all in skillet with cherry tomatoes.
- Add salt and pepper to taste.
