Red Lentil Pasta

Ingredients

  • Red lentil pasta
  • Chicken breast
  • Cherry tomatoes
  • Salt and Pepper
  • 1/3 cup finely chopped onion
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine
  • 2 tablespoons white/red wine vinegar
  • 6 tablespoons butter
  • 2 teaspoons basil
  • Lots of onion powder

Directions

  1. Cook pasta according to bag.
  2. Boil chicken breast until cooked and then sauté in olive oil in skillet, add spices.
  3. Make sauce: Heat a skillet over medium-high heat. Coat pan with cooking spray. Add finely chopped onion to pan; sauté 2 minutes, stirring frequently. Stir in chicken broth, white wine, and white wine vinegar; bring to a boil. Cook until reduced to 1/4 cup (about 5 minutes). Remove from heat; stir in butter and basil.
  4. Combine all in skillet with cherry tomatoes.
  5. Add salt and pepper to taste.
