Red Beans & Rice

  • 4 links Evergood Louisiana Hot-links
  • White rice
  • Chicken broth
  • Red beans, rinsed
  • Seasoning for rice:
    • 1 1/2 teaspoons ground cumin
    • 1/2 teaspoons kosher salt
    • 1 teaspoons chili powder
    • 1 1⁄2 teaspoons garlic powder
    • 3⁄4 teaspoon smoked paprika
  • Optional: bell peppers, red onions, kale

1. Cook rice: add rinsed rice, chicken broth and all spices to rice cooker, flip the switch to cook.

2. When rice is done, add rinsed red beans to rice cooker, allow to sit in warm setting for 10 minutes.

3. Cook hot links: Add avocado oil and minced garlic to cast iron pan, sauté for a few minutes. Add cut up hot links  (optional: onions, bell peppers, kale), sauté for a few minutes.

4. Pile on hot links over rice. Serve with crusty bread and thick slices of sharp cheddar cheese.
