Nuñez Risotto
Ingredients
- 1 cup risotto
- 3 cups chicken broth
- 4 cloves of garlic, diced
- 5-8 cremini mushrooms, sliced
- 1 bushel of brocolini or kale, stems cut and tops sliced
- Olive oil
- Rotisserie chicken
- Parmesan cheese
Instructions
1. Cook risotto: add rice and most of the broth to rice cooker. Cook.
2. Dice up garlic, mushrooms and brocolini or kale.
3. In pan, heat up garlic in olive oil. Add mushrooms and sauté until softened.
4. Add brocolini to pan, sauté for 3 minutes. Add a splash of chicken broth and cover to steam for a few minutes.
5. Add risotto to pan with mushrooms and brocolini and kale. Sprinkle with parmesan cheese and salt and pepper to taste. Add rotisserie chicken on top and serve.
